Guest Post: 4 Step Recipe – Beef Shorshe Tehari

1kg beef (cut into small cubes)
1kg rice (soaked in water for 1hr)
1 cup sliced onion
½ cup sliced onion- for rice
2 tbsp mustard seed powder
1½ tbsp fenugreek powder
4 tbsp garam masala powder
2 tbsp ginger and garlic paste
½ cup yogurt
Green chili – as required
Salt to taste
¾ cup vegetable oil
½ cup Mustard oil or as required
Potatoes (cut in half) as required

1. Boil and peel the potatoes, then slice them in half and pan fry the sides in some oil until golden and set aside.
2. Fry onions until golden brown (remove and save half a cup for later) and pour in beef. Sauté until dry, add ginger & garlic paste, mustard, fenugreek and garam masala. Cook until oil separates. Add yogurt, water and cook on medium heat for an hour until beef is tender. Once tender add in the potatoes, season with salt and let it simmer.
3. In a different pot, heat mustard oil, cook onions until golden and add rice.  Cook for five minutes. Add hot water, green chilli. Season with salt. Cook until half done with the lid on.
4. Mix in the fried onion saved from earlier and the beef with the rice and let it simmer until the rice is done. Let is rest for a little bit before serving with fresh cut lime and green chili.
