Ultimate Chocolate Mud Cake

Things you’ll need:
For the cake
200 grams flour
45 grams cocoa powder
2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
2 tbsp oil
2 tsp coffee
180 dark chocolate
190 grams sugar
96 ml water
200 grams butter
145 ml milk
2 eggs
Chocolate ganache
150 grams chocolate chips
50 grams heavy cream
Lets get started 🙂
Preheat the oven to 180 degree c. Line an 8 inches round cake pan with parchment paper.
Pour the water into a saucepan. Add coffee, butter, dark chocolate and heat gently until it melts.
Add in the sugar and whisk well until it dissolves.
Pour this into a bowl and set aside to cool down a bit.
Sift the flour, cocoa powder, baking powder, baking soda, salt together and keep it a side.
Now add in milk, eggs, oil to the chocolate mixture and whisk well using your electric mixer.
Add in the flour mix in 1/3 at a time and mix well. Do not over mix the batter.
Pour this into the prepared pan and bake for 40-45 minutes or until toothpick inserted in center comes out clean.
Remove the cake from the oven and keep it to cool down.
Make the ganache by melting the chocolate chips with heavy cream.
Spread it on top and cover the whole cake. Sprinkle some crushed hazelnuts and ferrero’s.
